Recipe: Healthy Vegan Chili

Quick, flavorful and super healthy. This chili is a spin on the Physicians Committee for Responsible Medicine's delectable recipe. 

Ingredients:

(serves 10)

  • 1/2 cup of boiling water

  • 1/2 cup of textured veggie protein

  • 1 chopped onion

  • salt and pepper

  • 1/2 chopped green pepper

  • 1/2 chopped yellow pepper

  • 1/2 chopped orange bell pepper

  • 2 cloves of minced garlic

  • 1/2 cup of veggie stock

  • 1 can of mixed beans

  • 1 can of kidney beans

  • 2 whole tomatoes

  • 1 jalapeno pepper

  • 1-2 teaspoons of chili powder

  • 1 2/2 teaspoons of dried oregano

  • 1 1/2 teaspoons of ground cumin

  • 1/4 teaspoon of cayenne 

How To:

Pour textured veggie protein into pot of boiling water and let stand until softened. 

while the textured veggie protein is boiling, Braise the onion, bell peppers and garlic in a skillet with water, salt and pepper until onion is clear.

 then add remaining ingredients and pour into pot with Textured Veggie Protein. let this mix simmer for at least 30 minutes.
